Broccoli gets better when you leave it alone in a hot oven.
High heat gives you those crisp edges, soft centers, and just enough char to make it feel like more than a side. From there, it doesn’t need much—just something to wake it up and cut through some of the bitterness.
Chim Chim Churri adds a bright, herby, and little punchiness with its citrus notes. It coats the broccoli before it roasts, and helps season all those great crispy edges that come with roasted broccoli. Then after is roasts, we make the vinaigrette right in the pan. As soon as it comes out, add butter, mustard and vinegar. Give it a good toss to fully melt the butter and coat each piece of broccoli. Garnish with you favorite parmesan cheese, and a drizzle of chili oil for a little spice!

1-2 heads of broccoli, cut into florets

Directions
Preheat the oven to 425°F. Line a sheet pan if desired.
Prep the broccoli. Cut into evenly sized florets for consistent cooking.
Season. Toss the broccoli with olive oil and Chim Chim Churri until well coated.
Roast. Spread evenly on a sheet pan and roast for 20 minutes, or until the edges are crispy and the broccoli is tender.
Finish on the pan. Immediately after removing from the oven, add butter, red wine vinegar, and whole grain mustard directly to the hot pan. Toss everything together until the butter melts and coats the broccoli.
Serve. Transfer to a serving dish and top with finely grated parmesan if using. I also like to add a drizzle of chili oil or sriracha for a little spice.

Considerations
Don’t overcrowd the pan: Spacing = crispiness. Crowding = steaming.
Cut size matters: Smaller florets get crispier; larger ones stay more tender.
Finish while hot: Adding the butter and vinegar right away helps everything absorb into the broccoli.
Adjust to taste: Like it sharper? Add more vinegar. Richer? A little extra butter.
