Spicy Sausage & Tater Tot Breakfast Bake
Meet your new favorite weekend-morning (or breakfast-for-dinner) hero. This Tater Tot Bake layers crispy frozen tater tots with spicy crumbled sausage, a custardy egg-and-milk mixture, and plenty of melty cheese. It's topped with a generous shake of Top of the Morning to bring it all home.
Here's what we love about this one: the tater tots do double duty as both the base and the built-in starch, so you don't have to dirty a separate pan for potatoes or hash browns. The spicy sausage adds just enough heat to keep things interesting, and the egg mixture soaks into every layer as it bakes, binding everything into one glorious, scoopable situation.
Top of the Morning is the secret weapon here. That savory, herby blend ties the eggs, sausage, and cheese together with a flavor boost. The seasoning blooms as it bakes, forming a gorgeous, lightly golden crust on top.
Whether you're feeding a hungry family on a Saturday morning, prepping a make-ahead weekday breakfast, or pulling off a full breakfast-for-dinner moment, his is the move. Easy to assemble, impossible to mess up, and absolutely worth the 30 minutes.
Why You'll Love It
- Uses frozen tater tots straight from the bag
- One baking dish, minimal cleanup, done in 30 minutes
- Top of the Morning does all the heavy seasoning lifting for you
- Crowd-pleaser for brunch, breakfast-for-dinner, or weekend meal prep
- Completely customizable — swap the sausage, change the cheese, make it yours
Ingredients
1 lb spicy ground breakfast sausage
32oz bag frozen tator tots
8 large eggs
½ cup whole milk
1 cups shredded cheddar cheese, divided
1 tbsp Top of the Morning
½ tsp salt
Black pepper, to taste
Considerations
Make it ahead: Assemble the entire casserole the night before, cover tightly with plastic wrap, and refrigerate. In the morning, pull it out while the oven preheats and bake as directed — you may need to add 3 to 5 extra minutes since it's starting cold.
Cheese swaps: Cheddar is classic here, but pepper jack will dial up the heat, and a Mexican blend melts beautifully if that's what you have on hand.
Sausage options: Mild breakfast sausage works great if you're feeding kids or spice-sensitive guests. Chorizo is also a delicious swap for a slightly different flavor profile.
Storage: Leftovers keep in an airtight container in the fridge for up to 4 days. Reheat individual portions in the microwave for 60 to 90 seconds or in a 350°F oven for about 10 minutes.
Instructions
Preheat your oven to 400°F. Lightly spray a 9x13 inch baking dish with nonstick cooking spray.
Arrange frozen tater tots in a single layer across the bottom of the prepared baking dish. No need to thaw them. Add a little bit of salt and pepper if you'd like.
In a skillet over medium-high heat, cook 1 lb of spicy ground breakfast sausage, breaking it apart as it cooks, until fully browned and no pink remains. About 6 to 8 minutes. You want this quite crumbly. Drain any excess grease.
While the sausage cooks, crack 8 large eggs into a medium bowl. Add ½ cup of whole milk, ½ tsp salt, and a few cracks of black pepper. Whisk until smooth and fully combined. Stir in 1/2 cup of shredded cheddar cheese.
Spread the cooked sausage evenly over the layer of tater tots in the baking dish.
Pour the egg and cheese mixture evenly over the sausage and tater tots, letting it settle down into the dish.
Sprinkle 1 tbsp of Top of the Morning evenly over the entire top of the casserole. Top with the remaining ½ cup of shredded cheddar cheese.
Bake uncovered at 400°F for 20 to 22 minutes, until the eggs are fully set, the cheese is melted and bubbly, and the top is lightly golden.
Let the casserole rest for 3 to 5 minutes before slicing and serving.
