Honestly, some of my favorite recipes require the least amount of work. This is one of those. Great ingredients in a simple preparation is sometimes all that's required.
Buttery Castelvetrano olives, creamy feta, garlic, strips of lemon peel, and good olive oil all slowly soften into each other. Chim Chim Churri brings brightness and herbaceous depth, while just a touch of red wine vinegar sharpens everything enough to keep it balanced.
It’s salty, rich, citrusy, and exactly the kind of thing that disappears faster than you expected. Serve it with warm bread, crackers, or straight from the bowl standing in the kitchen. This is sure to be a dinner party hit.

1 teaspoon red wine vinegar
Directions
Prep the olives and garlic. Slightly smash the Castelvetrano olives and whole garlic cloves using the side of a knife or the bottom of a glass to help them absorb the marinade.
Peel the lemon. Using a vegetable peeler, peel 3-4 strips of the lemon zest.
Heat the marinade. In a medium sauce pan combine olives, smashed garlic cloves, lemon peel strips, olive oil, Chim Chim Churri, and red wine vinegar. Simmer over low heat untll the olive oil begins to sizzles.
Marinate. Break up your feta cheese in a shallow bowl. Pour the olive mixture from the pan over the feta and let sit for at least 30 minutes, but ideally an hour.
Serve. Bring to room temperature before serving for the best texture and flavor. Serve as is, or with crusty bread!
