Directions
In a dutch-oven or a a slow cooker, add in the chicken thighs, Let’s Taco-Bout It, salsa and whole garlic cloves. Mix everything together the best you can until the chicken is coated.
Cook covered for about 2 hours or until the chicken is cooked through. When it’s cooked through, use a fork to shred the chicken into the desired size pieces.
Depending on the chicken, and the salsa you choose, this recipe can be a bit juicy. Once shredded, I like to put everything back on the stove, uncovered on low heat to help the chicken absorb some of the liquid, and to help some of it cook off. I usually go for another 45-90 minutes.

Considerations
- Chicken thighs vs. breasts: Thighs are the move here. They stay tender, shred easily, and don’t dry out during the long cook. You can use breasts, but you’ll lose some richness.
- The salsa matters: This is one of the main flavor drivers. A smoky salsa will give you depth, a bright one will keep things fresh. Choose something you’d actually eat on its own.
- Don’t skip the final cook-down: After shredding, letting the chicken cook uncovered is where things level up. The liquid reduces, the flavor concentrates, and the texture tightens into something taco-ready instead of soupy.
- Garlic (optional, but not really): Whole cloves melt into the sauce as it cooks. Subtle, soft, and worth it.
