Directions
Preheat the oven to 425°F. Line a large sheet pan with parchment paper if desired.
Prep the vegetables. Cube the sweet potatoes into even pieces. Halve the okra and thinly slice the red onion.
Start the sweet potatoes. Add the sweet potatoes to the sheet pan. Drizzle with olive oil and season with ½ tablespoon Herbs of a Feather, plus salt and pepper. Toss to coat and spread evenly.
Add the remaining ingredients. Remove the pan from the oven and push the sweet potatoes to one side. Add the sliced andouille sausage, okra, and red onion to the pan. Drizzle with a bit more olive oil and sprinkle the remaining 1 tablespoon Herbs of a Feather over everything. Mix together.
Roast. Return the pan to the oven and cook for another 20–25 minutes, stirring halfway through, until the sausage is browned and the vegetables are tender with crispy edges.
