Nostalgia wins for me every time. I’d take a meal from my childhood over almost anything else, and Chili Mac sits near the top of that list. It’s quintessentially Midwestern: finely minced, seasoned ground beef served over noodles of your choice. There’s debate over whether beans belong in it—or even a little cinnamon—and the answer to both is absolutely not.
There was a small restaurant where I grew up that served Chili Mac and Chili Dogs, and it was the spot for birthday parties, family get-togethers, and quick weeknight dinners. Eventually, my mom got tired of paying for it and decided to recreate it herself. Somehow, she made it even better.
Now, as an adult, whenever we travel back to my parents’ house, there’s about an 80% chance this is simmering on the stove when we walk in. I can smell it the second I get out of the car, and my mouth waters before I even make it through the front door.
It’s a humble dish that feeds a crowd and never tries too hard. Ground beef, onions, noodles, and enough seasoning to make everything feel warm and familiar. Let’s Taco ’Bout It gives it depth and spice, turning a handful of pantry staples into the kind of dinner people go back for automatically.

2 pounds, ground beef

⅓ cup Let’s Taco ‘Bout It

1 tablespoon garlic powder

2 teaspoons salt

1 teaspoon black pepper

1 medium yellow onion, finely diced
Directions
Boil the Beef. Place the ground beef in a large pot, and cover with cold water. The water should come just above the top of the ground beef. Use a wooden spoon to break the ground beef into small bits.
Place the pot on a stove on medium heat. Occasionally stir the beef until full cooked, and continue breaking up the ground beef into smaller pieces.Strain and Season. We need to save the cooking liquid. I like to place a colander over a large bowl and strain the liquid directly into the bowl.
Once strained, add the ground beef back into the pot. Add the finely minced onion, Let’s Taco ‘Bout It, garlic powder, salt and pepper.
Add about 2 - 2 ½ cups of the reserved liquid into the pot and stir everything to combine.Simmer. Add the chili mac back on the stove over low heat and cover it. Let it simmer for at least 30 minutes - but the longer the better.
Cook Noodles. As the chili mac is simmering, cook your noodles to your liking.
Serve. Before you are ready to serve, remove the lid from the pot and turn the heat up a bit. Let some of the liquid cook off to help condense the flavor profile.
To serve, scoop some chili mac over noodles. We like to top with shredded cheese and diced onions!
