Deviled eggs are one of those foods that somehow belong everywhere—holiday tables, baby showers, cookouts, Sunday lunches, standing around the kitchen before dinner officially starts.
But these take a slightly different route.
Instead of fully hard-boiling the eggs and turning the yolks into a separate filling, the eggs are cooked just long enough for the centers to stay soft and jammy. Then the mustardy, caper-packed topping gets dolloped right over the top instead of piped back in.
It’s easier, less fussy, and honestly? Better.
You still get all the creamy richness and tangy flavor of a classic deviled egg, but with a softer texture and a little more character. Dijon brings depth, yellow mustard keeps the nostalgia intact, and capers cut through everything with just enough sharpness.
Top of the Morning ties it all together with warmth and brightness that make the whole thing feel thoughtful without trying too hard.
They’re creamy, punchy, a little retro, and the kind of appetizer people keep hovering around.
Why You’ll Love It
Less fussy than classic deviled eggs: No scooping or piping required
Jammy centers: Richer texture and better flavor
Fast and approachable: Easier than traditional deviled eggs
Balanced flavor: Creamy, tangy, salty, and bright
Perfect for entertaining: Looks impressive with minimal effort
Ingredients
-
6 eggs
-
1 tablespoon, mayo
-
1 tablespoon, coarse dijon or whole grain mustard
-
1 teaspoon, yellow mustard
-
½ teaspoon diced capers
-
½ teaspoon caper juice or pickle juice
-
1 teaspoon, Top of the Morning
Directions
Boil the eggs. Bring a pot of water to a rolling boil. Carefully add the eggs and cook for 7 minutes for jammy centers.
Cool and peel. Transfer the eggs to an ice bath to stop the cooking. Once cooled slightly, carefully peel the eggs.
Prepare the topping. In a small bowl, combine mayonnaise, coarse Dijon mustard, diced capers with caper juice, and yellow mustard. Stir until smooth.
Slice the eggs. Cut the eggs in half lengthwise.
Assemble. Spoon or dollop the mustard mixture directly over the jammy egg centers.
Garnish and serve. Finish with Top of the Morning, and additional capers if desired.
Recipe Note
Considerations
Jammy is the goal: Seven minutes gives you a softer, richer center that feels more luxurious than a traditional hard-boiled deviled egg.
No piping required: This recipe intentionally skips the extra work. A rustic dollop over the eggs feels relaxed and inviting.
Peel carefully: Softer eggs are a little more delicate, so take your time.
Serve slightly chilled or room temp: Both work beautifully here. Straight-from-the-fridge cold can mute some flavor.
