10 tortilla shells, soft

2 15-ounce cans, enchilada sauce

4 ounces, colby jack cheese

4 ounces, sharp white cheddar cheese

4 ounces, sour cream

Directions
Preheat the oven to 325°F.
Cook the filling. In a large skillet over medium heat, cook the ground beef and diced onion until browned and softened. Drain excess grease if needed.
Season. Stir in Let’s Taco ’Bout It and diced green chilies. Cook for another 1–2 minutes until fragrant.
Add richness. Remove from heat and stir in sour cream along with ½ of the cheese mixture.
Assemble the enchiladas.
Spread a thin layer of enchilada sauce on the bottom of a baking dish. Fill each tortilla shell with the beef mixture, roll tightly, and place seam-side down in the dish.
Top with sauce and cheese. Pour the remaining enchilada sauce over the top and cover generously with sharp white cheddar cheese.
Bake. Bake uncovered for about 25 minutes, or until bubbly and melted.
Finish and serve. Garnish with parsley before serving.
Recipe Note
Considerations
Don’t overfill the tortillas: A little restraint makes rolling much easier.
Use freshly shredded cheese if possible: It melts smoother and gives a better texture.
Sauce generously: Dry enchiladas are tragic. Make sure everything is coated well. Also, buy a high-quality enchilada sauce without any oils or fillers. You won't regret it. Siete or Hatch are my go-tos!
Let them rest briefly: Five to ten minutes helps everything set before serving.
